Interesting sounding solutions.. but what are your stated goals?  I would 
surmise some of them from the technology you're looking at employing, but 
don't have a complete picture of what you're trying to do here. 
What ARE you trying to accomplish...  Create an senescent RV?  hehe..

Most microcontrollers can collect this type of data John.  It's networking it 
that's the tricky part.  But in the case of the arduino, the data can either 
be shipped over to a PC via serial data... or you can use it as an excuse to 
buy this cool Ethernet shield to put your measurements on the web:

Either way.. you could take a bunch of cool RV readings with an Arduino...

If you're really into that kind of home measurement and real-time control 
though, you need to spend some time looking at Mr.House:

The software possabilities of all of your real=time monitoring and control 
hardware projects can be realized with a system like that. :)
