I got started with the "What is a Micro Controller" from Parallax...
It's really simple to get started with and the book covers the most
basic concepts.
Such as Digital I/O, Reading a voltage, using 7 segment LED displays,
controlling a digital potentiometer etc...
You can download the book and have a look at it to see if the kit is for
you,

The kit can be bought from Parallax but Radioshack is usually cheaper,

If you decide to buy from Parallax, make sure you get the kit that
includes the Stamp Board...
Unfortunately it's Windows only so you might want to check out to see
if Arduino have something similar since it works on Linux.
